Waking up early for the floating markets was worth it—watching boats piled high with pineapples and watermelons while sipping strong Vietnamese coffee from a vendor’s tiny boat was pure magic. The Mekong’s slow pace seeps into everything here, from the leisurely bike rides along the waterfront to the way locals chat for hours in sidewalk cafes. Even the bustle of the city center feels gentler than in Hanoi or Saigon. Plus, the grilled snakehead fish at the night market is some of the best I’ve had in the Delta—crispy skin, tender meat, and that sweet-spicy dipping sauce I still dream about.
